There is an amazing and sometime confusing array of herbs and spices available to cooks today. You find fresh and dried versions of common and exotic seasonings at the supermarket, farm market and gourmet stores. But which ones do you use to flavor the beef, pork, lam, chicken, turkey, fish or shellfish on the menu this week?  

New and experienced cooks alike often struggle with how to season a variety of meats. Onion and garlic goes with almost any savory dish but what other herbs and spices can you add beyond those two? The same old meals get boring after while so following are some suggestions to help you spice up your meat, poultry and seafood!

Herbs and Spices For Meat

Beef - Allspice, basil, bay leaf, cayenne pepper, chili powder, cumin, curry powder, garlic, ginger, marjoram, oregano, and thyme all go well with beef.

Pork - Caraway seed, cayenne pepper, cinnamon, chili powder, coriander, cumin, curry powder, dill, garlic, ginger, rosemary, and thyme compliment and enhance the flavor of pork.

Lamb - Curry Powder, cayenne pepper, dill, garlic, mint, oregano, rosemary, and thyme

Veal - Bay Leaf, cayenne pepper, Coriander, dill, garlic, oregano, rosemary, sage, thyme


Herbs And Spices For Fish And Shellfish

Try the following herbs and spices for fish and shellfish; bay leaf, basil, cayenne pepper, coriander, curry powder, dill, marjoram, oregano, tarragon, or thyme.

Salmon with lemon and dill makes a wonderful flavor combination!

Herbs And Spices for Chicken And Turkey

Next time you cook chicken or turkey try a combination of several of these herbs and spices; basil, bay leaf, cayenne pepper, cinnamon, chives, cloves, coriander, curry powder, garlic, ginger, marjoram, nutmeg, oregano, paprika, rosemary, sage, tarragon, or thyme!
